With over a decade and half of experience working in some of the best kitchens in France, The United Kingdom, and Dubai, Chef Jean-Philippe Dupas promises to bring a fresh new culinary vision to the Waldorf Astoria Shanghai's signature fine dining destination. His new Menu puts premium, seasonal ingredients in the spotlight. Fine cuts of meat and fresh seafood are presented in innovative and sophisticated, yet ultimately flavorful and comforting, gourmet creations. Foie Gras with Blueberry; Wagyu Beef Tartare and Asparagus Soup with Crawfish are some of Chef Jean-Philippe’s inspired appetizers. Memorable mains include Duck Breast Apicius; Whole Boston Lobster and Wagyu Beef Tenderloin. Dark Chocolate Soufflé and Fraisier Georges V are some of his spectacular French desserts. To cater to the gourmet’s palate, Chef Jean-Philippe has also created a 7-course Degustation Dinner Menu.
